You trust your fridge right? An air source heat pump is very similar. It splits the ambient temperature air into cold air and hot air, expelling the cold air and using the hot air to warm the liquid circulating your radiators/underfloor heating, just like a conventional gas or oil system would.
Technically speaking, the outside air is blown over a network of tubes filled with a refrigerant. This warms up the refrigerant and it turns from a liquid into a gas. The refrigerant transfers its heat to water, making it warm. This warm water is sent around your radiators or underfloor heating.
